As y’all know we have been experimenting with a lot of new recipes later. Truth be told, I feel a little silly calling Ultimate Chicken Fajita Nachos a new recipe but, it’s true – we’ve never done any real version of nachos. Fajitas and Enchiladas are primarily on our Mexican food menu. I came across a vegetarian version of this recipe on eMeals but, knew we would need to remove and add a little of this and that to make it the perfect recipe for us. So, here’s our version of Ultimate Chicken Fajita Nachos

Ingredients:
2 lbs Pre-seasoned Fajita Chicken
3 Bell Peppers, diced
1/2 Onion, diced
3 Tbsp Olive Oil
1 Tbsp Chili Powder
2 tsp Ground Cumin
16oz Fresh Salsa
2 15oz cans Black Beans, drained & rinsed
8 oz Colby-Jack Cheese, grated
2 bags of Tortilla Chips
1) Pre-heat the oven to 350*. Grill chicken and chop into bite-size pieces.
2) Sauté the bell peppers and onion in hot oil in large skillet. Once tender, add in the Chili Powder, Cumin, Salsa & Black Beans. Mix together until it is heated through.
3) Arrange tortilla chips on a foil-lined baking sheet. (You may need two cooking sheets). Once chips are laid out, place the bean and pepper mix on the chips. Top with the grated cheese (put on extra, it melts away!). Then place in the oven for 10 minutes or until the cheese is melted and enjoy!
*Some additional option would be shredded lettuce, sour cream or guacamole.
